Sheet pan garlic salmon & veggies

Ingredients:
- 1 1/2 lbs salmon fillets, cut into 4 portions
- 2 lbs fresh Brussel sprouts, stemmed and cut in half
- 2 lbs red or fingerling potatoes, quartered
- 3 Tbsp olive oil
- 1-2 cloves of garlic, minced and divided
- 1 1/4 tsp of sea salt, divided
- 1/2 tsp ground black pepper
- 1 sliced lemon (optional)
Preparations:
- Preheat oven to 450F and line a baking sheet with parchment paper or cooking spray.
- Arrange salmon pieces onto baking sheet and drizzle with olive oil, sprinkle garlic, salt, and pepper. Top with lemon slice if desired.
- In a large bowl combine the vegetables with oil, salt, pepper, and remaining garlic and toss to coat.
- Spread veggies evenly onto to baking sheet around the salmon pieces.
- Bake for 15 minutes and remove the salmon.
- Continue to cook the veggies for an additional 20 min until sprouts are crispy and potatoes are fork tender.
